I once heard Stravinsky's Petrushka and Mussorgsky's Picture at an exhibition performed on two accordions.

You're right. There are often multiple arrangements/transcriptions of classical pieces, each varying slightly. The instrumentation of mine will be different from Jacob's, so the sound will vary slightly in certain places.
